With more than 10,000 restaurants and bars worldwide, our commitment carries significant weight. Our F&B operations are expansive and account for 12% of Accor’s carbon footprint, 40% of our water footprint and 80% of our biodiversity impact. Recognizing this and in order to accelerate our movement towards a more sustainable food model, we recently launched our Good Food Policy, setting seven ambitious commitments to achieve by 2030.

Celebrating Sustainable Cuisine: Discover Executive Chef Decha’s Locally Inspired Creations at Sofitel Sanya Leeman Resort

Perched on the shores of the South China Sea, Sofitel Sanya Leeman Resort embraces both the beauty of Hainan island and a deep commitment to sustainability. Rooted in local culture, the resort joined three other Accor hotels on the island to launch 88 Bites ౼ a year-long initiative celebrating sustainable cuisine, created on the initiative of Executive Chef Blair Ding at Sofitel Haikou. The challenge? Rotating each quarter, the Chefs each created 22 menu items that honor Hainan’s rich culinary heritage while showcasing the possibilities of eco-conscious dining.

When it was his turn, Executive Chef Decha Chunhakhantharot at Sofitel Sanya Leeman crafted along with many other culinary delights a Cashew Nut Bread, highlighting the island’s beloved nut staple, Wild Wuzhishan Mushrooms Risotto, Wenchang Coconut Latte Mousse Cake, as well as the Chef’s favorites: a Hainan Mango Salad with Sanya green mango and local crab meat and the Certified Hainan Sea Bass with sour mango salad. Beyond showcasing innovative flavors, the program raised environmental awareness among guests and helped reduce the resorts’ carbon footprint by prioritizing ingredients sourced on the island, proving that sustainability and exceptional dining can go hand in hand.

88 Bites is just one of many efforts at Sofitel Sanya Leeman Resort. Other initiatives include welcoming VIP guests with locally crafted gifts, repurposing coffee grounds into scented candles and prioritizing local food suppliers to reduce their impact from transportation. Together, these efforts not only celebrate the rich flavors of Hainan but also foster a culture of sustainability, inviting everyone to be part of the journey.
